Yesterday we had our first snow storm of the season. When I woke up it was just tiny, little flakes starting to fall and about an hour later it was coming down like a snow globe gone crazy! It was beautiful. Hibernation mode set in immediately. To honor this big event I was looking for a pancake or waffle recipe and came across one for gingerbread waffles. I didn't change a thing in the recipe and they were delicious! We topped them off with homemade apple butter and a bit of whipped cream. They are even good plain with nothing on them. Seriously good. I would highly recommend this recipe and will definitely be making these again. They taste like Christmas and smell heavenly! What could be better on a snow day?!
Today we spent some time digging out from the snow. It is bitterly cold here too. Temperatures below zero and wind chills around 30 below! The sun was shining which certainly helps. These temps feel like it should be January or February not December! You walk outside and your nose hair freeze, your cheeks fall off your face and you can't breathe because the cold wind took it away! It's a good thing that I've also been busy working on some Christmas gifts while hibernating from the cold. I'll be sure to post those soon.
